Did you use chick peas from the can or dried ones? THat's usually the reason that they don't hold their shape. Did you add the bread crumbs? The only thing I can suggest is if you fry one and it falls apart, try adding some more bread crumbs and a tablespoon or so of flour

You can marinate the meat overnight with the same ingredients but make sure the meat is cut thin but large flat sheets. It would also be a good idea to incorporate a layer of meat that has some fat on it as well to keep the meat tender b/c when you use a roaster, it tends to dry meat out. Stack the marinated meat in layers alternating with the meat that has fat. Then cook according to roaster instructions. Let me know how it turns out :)

This is indeed the best recipe! thank you so much Dede. I've been making humus for the past 4 years but my hummus was always too thick. I followed your recipe and added the sour cream and I got a wonderful smooth creamy hummus just like at the restaurants. I just want to add that I used dry chickpeas that I bought by the pound (not caned) I boiled them (after socking for 12 hours in water and baking powder). Yes, some people do add olive oil to hummus and you can add a couple tablespoons if you'd like. The olive oils purpose is to keep the hummus moist but I use the yogurt instead. I use the olive oil on top of the hummus to keep it moist. HAPPY COOKING!

Hello and thanks for the comments. Well I would recommend using fresh tomatoes. The canned ones have to much liquid and the fresh ones add a wonderful element to the spinach. Yes I do use bleached all-purpose flour, sometimes I like to add a cup of wheat flour to make it more healthy but generally I do use the bleached all-purpose flour. HAPPY COOKING!

yes, you can fry or bake the meat. If you put it on the skewers you can bake them like that or you can grill them, if you grill them then do not move them for the first 4 minutes on the grill or they tend to fall apart, grill them for 4 minutes then turn them over :) You can also form them into little patties without the skewer and grill them.

I do not use egg because it adds a different taste to the kefta. If it starts to fall apart on you, you can just put all of the ingredients in a food processor and blend it really well, then it becomes like a meat paste and then you can form it on the kabob stick :)

there are a couple reasons why they may not have worked, 1. you may have been trying to put to much meat on the skewer. 2. you need to strain the onions if you blended them, if you finely chopped them then you should be fine, you can also omit the onions, that helps too sometimes. You need to refrigerate the skewers after you put the meat on them not before. Try it again, don't give up :)

i made them on the skewers today but they fell apart i duno why - i had 5 pounds reguler meat with 2 pounds goat - grinder together. i added sumac, salt, pepper, and 2 onions. i left it in the fridge over night - as soon as i tried to put it on the skerwes it was just falling apart.. what could i have done wrong?

Thank you for the comment, I try to make my recipes as easy as possible for my viewers, I do know that there are more traditional ways, but when you can take a shortcut but keep the taste the same then I take that route so that my viewers find it easier and less challenging. I actually tried your recipe yesterday. I gotta tell ya, it was really great. My family absolutely loved it. They were all wondering what herbs i used. LOL When I told them it was just the cilantro that was bringing out the spicy flavour, they didn't believe me. I'll definitely be making this again. Highly recommend it to everyone else. You can make the tahini sauce, it is on my falafel video, it's really easy. Or you can make a white sauce or a gravy. If you use tahini sauce, garnish it with fresh parsley, it will look beautiful :)

Thank you so much for these recipes dedemed! My girlfriend and I also live in Montreal, and love Amir and shish taouk in general. Ive been looking for a recipe for it and the garlic sauce now for a while. We tried it tonight, and it didnt turn out as thick as it should be.. it was a little thinner than ceasar salad dressing. (We dont have a proper blender. Only a manual one that we have to turn ourselves.)

yes you can, all oils are harmful when over heated, make sure you heat your pan for about a minute but not more than that before you put the oil, if you heat it more than that then the oil will burn. Good luck :)

fatoosh is the best, i make my own variations for instance with walnut pieces yeah i know that's not traditional but it's still good. Sometimes I add crumbled feta cheese as well. I happen to think that bell peppers make it too sweet. Anyway I'm glad i found this channel I'll check out more of these videos. I wonder if you have plain Yogurt video :)

Here is my recipe. It's called rez 'b halib (translation: rice in milk) 1 qt milk 3/4 cup rice 1 1/4 cups sugar 1/2 tsp rose water 1/2 tsp orange blossom essence 1 cup cold water Wash rice well. Boil milk and then add water and rice. Boil 1/2 hour medium flame. Stir well! When thickened add the rest of ingredients. Continue boiling until bubbles break through the pudding. Pour into individual serving dishes. I usually eat it cold, but you can eat it warm as well.

fettoush is different from tabboulle cause fettoush is a salad and you can add grilled meat to it but tabboule is almost an appetizer that i personnaly mix with hummus and eat with thin pita bread.

I like adding the cabbage and carrot for color and b/c it's healthy, the parsley is a must for Lebanese salad along with mint, sometimes when you can't find green fresh mint it's ok to add dried mint :) Try it my way, i assure you you'll love it :)
